Caprese Pasta Salad (Fructose-Friendly & Gluten-Free)

Ingredients (My Favorite Brands)

  • 1 box gluten-free pasta of choice

  • 2 cups spinach, roughly chopped

  • 2 tablespoons garlic-infused olive oil

  • 10-12 cherry tomatoes, quartered (3 cherry tomatoes is a low-FODMAP serving)

  • Roughly 1 cup chopped prosciutto or bacon

  • 1/2 cup fresh mozzarella, diced

  • 1/2 cup fresh basil, roughly chopped

  • 1/3 cup Fody balsamic vinaigrette

  • Optional toppings: black pepper, pine nuts

Instructions

  • Cook the pasta according to package instructions.

  • Dice the prosciutto or bacon and sauté until crispy.

  • Chop your spinach, basil, mozzarella, and cherry tomatoes.

  • Combine all ingredients in a large bowl and mix well. Top with freshly ground black pepper, pine nuts, or whatever else sounds good.

Fructose Forward

  • If you can tolerate larger servings of cherry tomatoes, increase the portion size.
