Caprese Pasta Salad (Fructose-Friendly & Gluten-Free)

Ingredients (My Favorite Brands)
1 box gluten-free pasta of choice
2 cups spinach, roughly chopped
2 tablespoons garlic-infused olive oil
10-12 cherry tomatoes, quartered (3 cherry tomatoes is a low-FODMAP serving)
Roughly 1 cup chopped prosciutto or bacon
1/2 cup fresh mozzarella, diced
1/2 cup fresh basil, roughly chopped
1/3 cup Fody balsamic vinaigrette
Optional toppings: black pepper, pine nuts
Instructions
Cook the pasta according to package instructions.
Dice the prosciutto or bacon and sauté until crispy.
Chop your spinach, basil, mozzarella, and cherry tomatoes.
Combine all ingredients in a large bowl and mix well. Top with freshly ground black pepper, pine nuts, or whatever else sounds good.
Fructose Forward
If you can tolerate larger servings of cherry tomatoes, increase the portion size.
