Bacon, Cheddar, & Chive Savory Breakfast Muffins (Gluten-Free & Fructose-Friendly)
These gluten-free and fructose-friendly savory breakfast muffins are the perfect start to your day! They are packed with protein from the eggs and cottage cheese, plus the bacon, cheddar, and chives give them so much flavor. Super tasty without the bloat.

Ingredients (My Favorite Brands)
Dry ingredients
1.5 cups gluten-free flour
2 teaspoons baking powder
1/2 teaspoon salt
Wet ingredients
4 eggs
1 cup cottage cheese
1/4 cup milk or half and half
1 tablespoon garlic-infused olive oil
Mix-ins
4-5 slices of sugar-free bacon
1 cup grated cheddar cheese
1/4 cup fresh chives, finely chopped
Instructions
Cut the bacon into bite-sized pieces and cook in a pan over medium heat until crispy. Remove to a paper towel-lined plate.
Preheat oven to 400° F. Spray muffin pan with nonstick spray or use muffin cup liners.
In a medium bowl, combine the flour, baking powder, and salt.
In a blender or mixer, combine the eggs, cottage cheese, milk, and garlic-infused olive oil. Blend until smooth.
Mix the wet ingredients into the dry ingredients. Add the chives, bacon, and half of the cheese. Stir to combine.
Evenly distribute the batter between 12 muffin cups (roughly 1/4 cup per cavity). Sprinkle the remaining cheese on top.
Bake for roughly 25 minutes until the muffins are set.

Other Modifications
You can easily add your favorite veggies to this mix, or swap out the bacon for sausage or another protein.
