Ingredients (My Favorite Brands)

  • Dry ingredients

    • 1.5 cups gluten-free flour

    • 2 teaspoons baking powder

    • 1/2 teaspoon salt

  • Wet ingredients

    • 4 eggs

    • 1 cup cottage cheese

    • 1/4 cup milk or half and half

    • 1 tablespoon garlic-infused olive oil

  • Mix-ins

    • 4-5 slices of sugar-free bacon

    • 1 cup grated cheddar cheese

    • 1/4 cup fresh chives, finely chopped

Instructions

  • Cut the bacon into bite-sized pieces and cook in a pan over medium heat until crispy. Remove to a paper towel-lined plate.

  • Preheat oven to 400° F. Spray muffin pan with nonstick spray or use muffin cup liners.

  • In a medium bowl, combine the flour, baking powder, and salt.

  • In a blender or mixer, combine the eggs, cottage cheese, milk, and garlic-infused olive oil. Blend until smooth.

  • Mix the wet ingredients into the dry ingredients. Add the chives, bacon, and half of the cheese. Stir to combine.

  • Evenly distribute the batter between 12 muffin cups (roughly 1/4 cup per cavity). Sprinkle the remaining cheese on top.

  • Bake for roughly 25 minutes until the muffins are set.

Other Modifications

  • You can easily add your favorite veggies to this mix, or swap out the bacon for sausage or another protein.
