Fructose-Friendly Chocolate Chip Oatmeal Cookies

These fructose-friendly cookies are the perfect treat when you don’t want to mess with sugar or bloating! They are sweetened with brown rice syrup, which is made of glucose, and they’re also packed with gut-friendly ingredients like rolled oats and chia seeds. Plus they’re gluten-free and easily low-FODMAP depending on your yogurt choice. Enjoy!

Ingredients (My Favorite Brands)

  • Wet ingredients

    • 1/4 cup yogurt of choice (I used coconut)

    • 1 egg

    • 1/3 cup brown rice syrup

    • 1 teaspoon vanilla

  • Dry ingredients

    • 1 cup rolled oats

    • 1 cup gluten-free flour

    • 1/2 teaspoon baking powder

    • 1/2 teaspoon baking soda

    • 2 tablespoons chia seeds

  • Extras

    • 1/4 cup chocolate chips of choice (I used Enjoy Life)

    • 1/4 cup chopped pecans

Instructions

  • Preheat oven to 350° F.

  • Mix the wet ingredients in a large bowl. Whisk until smooth.

  • Combine the dry ingredients in a separate bowl. Mix well, and then gradually stir into the wet ingredients. If the dough is still too wet or sticky, sprinkle on more flour or oats until it’s thick enough to scoop.

  • Fold in the chocolate chips, nuts, and any other extras you’re including.

  • Scoop balls of roughly 1.5 tablespoons of dough onto a lined baking sheet 2 inches apart.

  • Bake for 10-12 minutes until browning around the edges. Mine stayed pretty round! You could flatten the dough slightly before baking if you prefer a more traditional cookie shape.

Other Modifications

  • You could try maple syrup in place of the brown rice syrup.
