Spicy Sausage Pasta alla Vodka (Low-Fructose & Gluten-Free)

Ingredients (My Favorite Brands)

  • For the Spicy Sausage

    • 1 lb ground pork (or meat of choice)

    • 2 tablespoons garlic- or shallot-infused olive oil

    • 2 teaspoons each:

      • Fennel seed

      • Crushed red pepper flakes

      • Italian herbs

    • 1 teaspoon each:

      • Salt

      • Gourmend garlic chive powder (optional but delicious)

    • 1/2 teaspoon black pepper

  • For the Pasta

    • Gluten-free pasta of choice (I used GF egg fettuccine from Trader Joe’s)

    • 3/4 cup low-FODMAP marinara

    • 1 cup cream

    • 1/3 cup vodka

    • 2 cups spinach, roughly chopped

    • 1/4 cup parmesan cheese

    • Fresh basil and additional parmesan to serve

Instructions

  • Heat the oil in a pan over medium heat. Add the pork and break into small pieces. Sprinkle with spices and cook for 7-8 minutes until cooked through.

  • Heat a large pot of boiling water and cook pasta according to package instructions.

  • Add the marinara to the sausage and stir well.

  • Add the cream and vodka and bring to a simmer.

  • Add the chopped spinach and parmesan cheese. Stir and let simmer until the spinach wilts, 1-2 minutes.

  • Divide pasta and sauce between bowls. Top with fresh basil and additional parmesan cheese.

Fine with Fructose?

  • If you tolerate fructans, you can buy premade Italian sausage to make this recipe even easier.

Other Modifications

  • You could replace the spinach with kale or modify the sausage seasonings as desired.
