Low-Fructose Pecan Pie (Gluten-Free)

Ingredients (My Favorite Brands)

  • 1 gluten-free pie crust

  • 2 tablespoons butter, melted

  • 3/4 cup brown rice syrup

  • 1/4 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • Optional: 1 oz bourbon

  • 1.5 cups pecans (1 cup chopped, 1/2 cup pecan halves)

Instructions

  • Preheat oven to 350° F.

  • Take gluten-free pie crust out of the freezer or make your own.

  • In a bowl, combine the melted butter, brown rice syrup, brown sugar, eggs, and vanilla. Add the bourbon if using. Mix well.

  • Stir in the cup of chopped pecans. Pour this mixture into the pie crust.

  • Arrange the remaining pecan halves in decorative circles on top of the filling.

  • Bake for 45-50 minutes until just set. Allow to cool before serving.
