Low-Fructose Pecan Pie (Gluten-Free)

Ingredients (My Favorite Brands)
1 gluten-free pie crust
2 tablespoons butter, melted
3/4 cup brown rice syrup
1/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
Optional: 1 oz bourbon
1.5 cups pecans (1 cup chopped, 1/2 cup pecan halves)
Instructions
Preheat oven to 350° F.
Take gluten-free pie crust out of the freezer or make your own.
In a bowl, combine the melted butter, brown rice syrup, brown sugar, eggs, and vanilla. Add the bourbon if using. Mix well.
Stir in the cup of chopped pecans. Pour this mixture into the pie crust.
Arrange the remaining pecan halves in decorative circles on top of the filling.
Bake for 45-50 minutes until just set. Allow to cool before serving.
