Low-Fructose Jalapeño Ham Quiche (Gluten-Free!)

Ingredients (My Favorite Brands)

  • Gluten-free pie crust

  • 6 eggs

  • 3/4 cup half and half or cream

  • 3/4 cup diced ham, bacon, or sausage (cooked)

  • 1 jalapeño, half diced and half sliced into rounds

  • 2 tablespoons fresh chives, chopped

  • 1 cup grated cheddar cheese, divided

  • 3/4 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon smoked paprika

Instructions

  • Preheat oven to 375°F.

  • Combine the meat, diced jalapeño, and chives and spread evenly in the bottom of your pie crust. Top with 3/4 of the cheddar cheese.

  • Whisk together the eggs, half and half or cream, and spices. Pour over the ingredients in the crust. Top with remaining cheese and the slices of jalapeńo.

  • Bake for 40-45 minutes until golden brown and set in the center. Let cool slightly before serving.

Fructose Forward

  • Try adding a green bell pepper or some halved cherry tomatoes.
