Low-Fructose Jalapeño Ham Quiche (Gluten-Free!)

Ingredients (My Favorite Brands)
Gluten-free pie crust
6 eggs
3/4 cup half and half or cream
3/4 cup diced ham, bacon, or sausage (cooked)
1 jalapeño, half diced and half sliced into rounds
2 tablespoons fresh chives, chopped
1 cup grated cheddar cheese, divided
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon smoked paprika
Instructions
Preheat oven to 375°F.
Combine the meat, diced jalapeño, and chives and spread evenly in the bottom of your pie crust. Top with 3/4 of the cheddar cheese.
Whisk together the eggs, half and half or cream, and spices. Pour over the ingredients in the crust. Top with remaining cheese and the slices of jalapeńo.
Bake for 40-45 minutes until golden brown and set in the center. Let cool slightly before serving.

Try adding a green bell pepper or some halved cherry tomatoes.
