Low-Fructose Spinach & Feta Quiche (Gluten-Free!)

Ingredients (My Favorite Brands)
Gluten-free pie crust
6 eggs
3/4 cup half and half or cream
1 cup spinach, chopped
2 tablespoons fresh chives, chopped
3/4 cup grated cheddar cheese
1/4 cup feta cheese
1 teaspoon salt
1 teaspoon pepper
Instructions
Preheat oven to 375°F.
Spread the chives, spinach, and feta evenly in the bottom of your pie crust.
Whisk together the eggs, half and half or cream, salt, and pepper. Pour over the ingredients in the crust. Top with cheddar cheese and additional pepper if desired.
Bake for 40-45 minutes until golden brown and set in the center. Let cool slightly before serving.

Try adding half a green bell pepper or some halved cherry tomatoes.
