Low-Fructose Spinach & Feta Quiche (Gluten-Free!)

Ingredients (My Favorite Brands)

  • Gluten-free pie crust

  • 6 eggs

  • 3/4 cup half and half or cream

  • 1 cup spinach, chopped

  • 2 tablespoons fresh chives, chopped

  • 3/4 cup grated cheddar cheese

  • 1/4 cup feta cheese

  • 1 teaspoon salt

  • 1 teaspoon pepper

Instructions

  • Preheat oven to 375°F.

  • Spread the chives, spinach, and feta evenly in the bottom of your pie crust.

  • Whisk together the eggs, half and half or cream, salt, and pepper. Pour over the ingredients in the crust. Top with cheddar cheese and additional pepper if desired.

  • Bake for 40-45 minutes until golden brown and set in the center. Let cool slightly before serving.

Fructose Forward

  • Try adding half a green bell pepper or some halved cherry tomatoes.
